- 1 1/2 pounds chicken thighs
- 3 cups chicken stocks
- 1 tablespoon salt & pepper
- 1 minced ginger
- 1 onion finely chopped
- 1 chicken bouillon cube
- 1 package noodle long rice
- 2 green onions chopped
Directions

1Put chicken in a saucepan. Add 3 cups of the chicken stocks, salt, pepper and ginger.

2Bring to a boil, skim, lower heat, and simmer for 45 minutes.

3Shred the chicken while boiling, add onion, bouillon cubes, add half cup of water, long rice, cook on lower heat, covered for 6 minutes, keep on cooking,

4Stir in chicken and till long rice noodles is soft, cut long rice into 4 inches lengths.

5Sprinkle with green onion before serving.
