Ingredients

  • 4 chicken cutlets (in chunks or strips)
  • 3 Tbsp. flour
  • 1/2 tsp. curry powder
  • 4 Tbsp. oil
  • 2 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. sugar
  • 1 can consomme (10 3/4 oz.)
  • 1 jar junior size baby apricots or peaches

Directions

    Shake first 3 ingredients in bag with chicken until coated. Saute in oil until golden brown.

    Mix remaining ingredients in bowl and add to chicken.

    Simmer until chicken is cooked.

    Serve with rice.
