Chicken Mandarin

  • 5 to 6 lb. chicken thighs
  • 1/2 c. flour
  • 4 Tbsp. margarine
  • 4 Tbsp. oil
  • 8 Tbsp. lemon juice
  • 4 Tbsp. honey
  • 1 Tbsp. soy sauce
  • 1 tsp. ginger
  • 2 (11 oz.) mandarin oranges
  • 1 c. orange juice
  • cornstarch

Directions

    Coat chicken with flour.

    In skillet, heat oil and margarine; brown the chicken.

    Drain off fat.

    Drain mandarin oranges saving juice.

    Mix juice with lemon juice, honey, soy sauce, orange juice and ginger.

    Pour sauce over chicken, cover and simmer 45 minutes or until tender.

    Remove chicken, thicken with cornstarch.

    Add chicken and mandarin oranges.

    Serve over rice.
