- 5 to 6 lb. chicken thighs
- 1/2 c. flour
- 4 Tbsp. margarine
- 4 Tbsp. oil
- 8 Tbsp. lemon juice
- 4 Tbsp. honey
- 1 Tbsp. soy sauce
- 1 tsp. ginger
- 2 (11 oz.) mandarin oranges
- 1 c. orange juice
- cornstarch
Directions

1Coat chicken with flour.

2In skillet, heat oil and margarine; brown the chicken.

3Drain off fat.

4Drain mandarin oranges saving juice.

5Mix juice with lemon juice, honey, soy sauce, orange juice and ginger.

6Pour sauce over chicken, cover and simmer 45 minutes or until tender.

7Remove chicken, thicken with cornstarch.

8Add chicken and mandarin oranges.

9Serve over rice.
