Chicken Marengo

Ingredients

  • 1 broiler/fryer, cut into pieces
  • 3 Tbsp. olive oil
  • salt and pepper
  • 1/4 c. chopped onion
  • 1 clove garlic, minced
  • 1/2 c. white wine
  • 1/4 c. tomato sauce
  • 1/4 tsp. thyme
  • 1 c. sliced mushrooms
  • 1 Tbsp. minced parsley

Directions

    In a large skillet, cook chicken in heated oil until well browned.

    Add salt and pepper as pieces of chicken are removed from skillet and set aside.

    Now cook onions and garlic in same oil until tender.

    Add white wine, tomatoes and thyme; simmer, scraping pan often.

    Return chicken to skillet, cover and cook slowly until tender, about 30 minutes.

    Add mushrooms which have been sauteed in butter.

    Serve chicken on platter after pouring sauce on top.

    Sprinkle with parsley, if desired.
