Chicken Marengo

Ingredients
- 1 broiler/fryer, cut into pieces
- 3 Tbsp. olive oil
- salt and pepper
- 1/4 c. chopped onion
- 1 clove garlic, minced
- 1/2 c. white wine
- 1/4 c. tomato sauce
- 1/4 tsp. thyme
- 1 c. sliced mushrooms
- 1 Tbsp. minced parsley
Directions

1In a large skillet, cook chicken in heated oil until well browned.

2Add salt and pepper as pieces of chicken are removed from skillet and set aside.

3Now cook onions and garlic in same oil until tender.

4Add white wine, tomatoes and thyme; simmer, scraping pan often.

5Return chicken to skillet, cover and cook slowly until tender, about 30 minutes.

6Add mushrooms which have been sauteed in butter.

7Serve chicken on platter after pouring sauce on top.

8Sprinkle with parsley, if desired.
