Chicken Marengo

Ingredients

  • 5 lb. cut up chicken
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • butter or oil
  • 2 cloves garlic, minced
  • dash of bouquet garni
  • 1/2 c. dry white wine
  • 1 jigger brandy
  • 6 medium tomatoes, cut in pieces
  • 1 1/2 c. sliced fresh mushrooms
  • chopped parsley

Directions

    Add salt and pepper to flour.

    Dredge chicken pieces.

    Brown in heavy pan turning several times.

    Add garlic, bouquet garni, wine, brandy and tomatoes.

    Cover pan tightly.

    Cook over low heat about 45 minutes or until chicken is tender. Taste for seasoning at 30 minutes and add mushrooms.

    Add parsley when done.

    Serve with chunks of French bread to dip in sauce.

    Serves 10 to 12. This may be prepared ahead and improves with reheating.
