- 18 teaspoon black pepper
- 14 teaspoon salt
- 14 cup flour
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 12 cup marsala wine
- 12 cup chicken stock, fat skimmed from top
- 1 tablespoon lemon juice
- 12 cup mushroom, sliced (fresh or canned)
- 1 tablespoon fresh parsley, chopped (optional)
Directions

1Mix together pepper, salt, and flour.

2Coat chicken with seasoned flour.

3In heavy-bottomed skillet, heat oil.

4Place chicken breasts in skillet and brown on both sides, then remove and set aside.

5To skillet, add wine and stir until heated.

6Add juice, stock, and mushrooms.

7Stir, reduce heat, and cook for about 10 minutes, until sauce is partially reduced.

8Return browned chicken breasts to skillet.

9Spoon sauce over chicken.

10Cover and cook for about 510 minutes or until chicken is done.

11Serve sauce over chicken.

12Garnish with chopped parsley if desired.
