- 4 chicken breast halves, boned and skinned
- 1/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. dried oregano
- 4 Tbsp. vegetable oil
- 4 Tbsp. butter
- 1 c. sliced mushrooms
- 1/2 c. Marsala wine
Directions

1Pound chicken breasts between sheets of plastic wrap until about 1/4-inch thick.

2Combine flour, salt, pepper and oregano and blend well.

3Heat oil and butter in heavy skillet on moderate heat until bubbling lightly.

4Cook chicken breasts on medium heat until lightly brown.

5As you turn breasts to second side, add mushrooms. Cook about 2 more minutes.

6Stir mushrooms.

7When lightly browned, add wine around chicken pieces.

8Cover pan and simmer gently about 10 minutes.
