- 1 tablespoon olive oil
- 1 lb skinless chicken breast halves or 4 skinless chicken breast halves
- 14 ounces chunky tomatoes with garlic and italian herbs, undrained
- 4 slices mozzarella cheese or 3 ounces mozzarella cheese
- hot cooked pasta or rice
Directions

1Heat oil in large skillet over medium-high heat.

2Add chicken; cook for 3-4 min on each side, or till golden brown; drain.

3Pour tomatoes and juice over chicken.

4Bring to a boil.

5Reduce heat to medium-low; cover.

6Cook for 20-25 min or till chicken is tender.

7Place cheese over chicken and tomatoes.

8Cover; cook for 1 to 2 minute or till cheese is melted.

9Serve over pasta or rice.
