  • 1 lb skinless chicken breast halves or 4 skinless chicken breast halves
  • 14 ounces chunky tomatoes with garlic and italian herbs, undrained
  • 4 slices mozzarella cheese or 3 ounces mozzarella cheese
  • hot cooked pasta or rice

    Heat oil in large skillet over medium-high heat.

    Add chicken; cook for 3-4 min on each side, or till golden brown; drain.

    Pour tomatoes and juice over chicken.

    Bring to a boil.

    Reduce heat to medium-low; cover.

    Cook for 20-25 min or till chicken is tender.

    Place cheese over chicken and tomatoes.

    Cover; cook for 1 to 2 minute or till cheese is melted.
