- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 teaspoon dried thyme
- 29 ounces chicken broth (two cans)
- 2 cups orzo pasta
- 1 lb chicken breast, diced
- 1/2 cup parmesan cheese, grated
- fresh ground black pepper, to taste
Directions

1In a deep skillet, heat olive oil over medium heat.

2Add onion and garlic and cook 2 to 3 minutes.

3Add thyme and broth and bring to a boil.

4Add orzo and chicken and stir.

5Reduce heat to a simmer and cover.

6Cook until liquid is absorbed, about 20 minutes.

7Stir in cheese and black pepper and serve immediately.
