  • 4 chicken breasts, boneless and skinless
  • 1/2 green pepper, cut into tiny pieces
  • 1/2 red pepper, cut into tiny pieces
  • 1/2 onion, cut into tiny pieces
  • 1 tomato, cut into small pieces
  • 1/2 c. shredded nonfat Mozzarella cheese

Directions

    Wash and place chicken flat in a baking dish (pre-sprayed with Pam cooking spray).

    Layer the chicken with the pre-cut green pepper, red pepper, onion and tomato. Bake at 400° for 40 minutes. Sprinkle shredded Mozzarella cheese on top and bake until cheese melts.
