- 1 lb. chicken thighs (skinless optional), cut in 1/2
- 3 Tbsp. vegetable oil
- 4 cloves garlic, chopped
- 2 Tbsp. chopped ginger
- 3 1/2 Tbsp. patis (fish sauce)
- 5 c. water
- 2 c. green papaya, cut in cubes
Directions

1Saute garlic and ginger in vegetable oil until golden brown. Add chicken.

2Let simmer until water is dry.

3Add patis; let it simmer again until water is completely gone and when the oil starts to sizzle.

4Then add 5 cups of water.

5Let it boil and then simmer for 15 to 20 minutes.

6Add the papaya.

7Cook the papayas until tender.

8Then serve.
