  • 6 whole chicken breasts
  • 2 lb. fresh broccoli or 4 (10 oz.) pkg. frozen broccoli
  • 1/2 c. butter
  • 1/2 c. flour
  • 3 c. chicken broth (from boiling the chicken)
  • 1/3 c. sherry
  • 1 tsp. salt
  • dash of nutmeg
  • 1/2 c. mayonnaise
  • 1 c. Parmesan cheese
  • 1/2 c. whipping cream

Directions

    Simmer chicken, covered with water (salt and pepper) 30 to 45 minutes until tender.

    Drain and chill.

    Remove bones.

    Slice each breast into 3 pieces lengthwise.
