  • 2 chicken breasts, cooked, deboned and chopped
  • 8 oz. bow tie pasta
  • 1/2 c. chopped Vidalia onions
  • 1 each green, yellow and red bell pepper, coarsely chopped
  • 1 clove garlic, peeled and crushed
  • 1 bunch fresh broccoli flowerets
  • 1/4 c. fresh sweet basil leaves
  • 1/4 c. extra light olive oil, divided
  • salt and pepper
  • grated parmesan cheese

Directions

    In a large pot, cook pasta according to package directions, drain.

    Add approximately 2 tbsp. olive oil and chopped basil leaves to pasta and toss.

    Set aside.
