Chicken Pasta Salad

Ingredients

  • 6 oz. rotini
  • 3 c. cooked and shredded chicken breast
  • 1 bunch spinach
  • 1/2 c. thinly sliced green onion
  • 1/2 c. salad oil
  • 1/3 c. white wine vinegar
  • 1/3 c. soy sauce
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. sesame seed
  • 1/4 c. slivered almonds

    Heat 1/4 cup oil in skillet with sesame seed and almonds until almonds are brown.

    Cool.

    Add the rest of the oil, soy sauce, vinegar, sugar, salt and pepper.

    Stir until sugar dissolves. Pour mixture over cooked noodles and chicken.

    Mix well. Refrigerate overnight.

    Add greens just before serving.
