- 5 egg yolks
- 3/4 c. sugar
- 2 1/2 Tbsp. plain gelatin
- 1/2 c. cold water
- 3/4 c. cream
- 3 Tbsp. dark rum or to taste
- 10-inch crumb pie shell
Directions

1Beat egg yolks until light; add sugar.

2Soak gelatin in cold water; put over low heat until dissolved.

3Pour over sugar and egg mixture, stirring briskly.

4Whip cream until stiff; fold into the egg mixture and flavor with rum.

5Cool until the mixture begins to set, then pour into pie shell.

6Chill until firm.

7Sprinkle top generously with shaved bittersweet chocolate curls.

8Garnish with whipped cream, if desired.

9Serve cold.
