  • 1 lb diced boneless skinless chicken breast
  • 1 each sliced green and red peppers
  • 1 large sliced onion
  • 1 packages shredded mozzarella or sliced provolone cheese
  • 1 packages sliced long ways, ciabatta rolls
  • 1 pinch season salt
  • 1 pinch black pepper

Directions

    In a skillet, saute vegetables in some butter until al dente & set aside.

    Next, do the same with chicken and seasonings with olive oil instead of butter until done.

    Spread butter on tops & bottoms of ciabatta rolls.

    Then, place tops of ciabatta face down & bottoms upright.

    Place chicken, vegetable mix, & then cheese on top of bottom pieces of bread.

    Bake until cheese melts & bread slightly crispy.

    Serve with chips or by itself.
