- 2 cups chicken stock
- 2 tsp fresh ginger, grated
- 1 None cinnamon stick
- 2 tsp fish sauce
- 2 tsp soy sauce
- 2 - 3 oz chicken filets, thickly sliced
- 1 tbsp lime juice
- 3 oz rice noodles, soaked in boiling water for 5 mins then drained
- 1 1/4 cups fresh cilantro leaves
- 1 1/4 cups beansprouts
- 1 None small red chili, thinly sliced
- 1 None spring onion, thinly sliced
Directions

1Bring stock, ginger, cinnamon stick, fish sauce, soy sauce and 1 cup water to a boil over high heat, cover, reduce heat to low and simmer 5 mins. Discard cinnamon stick. Add chicken and lime juice and cook for 2 mins, or until chicken is cooked through.

2Divide noodles and chicken between 2 serving bowls. Ladle hot stock over noodles and serve topped with cilantro, sprouts, chili and onion.
