- 2 whole chicken breasts, halved lengthwise
- dash of salt and pepper
- 1/4 c. flour
- 4 Tbsp. margarine
- 1 c. fresh mushrooms
- 1 garlic clove, minced
- 1/4 c. dry white wine
- 2 Tbsp. lemon juice
- 2 Tbsp. chopped parsley
Directions

1Place chicken breast between 2 pieces of plastic wrap.

2Pound chicken to 1/2 inch thickness.

3Sprinkle with salt and pepper; coat with flour.

4In a large skillet, brown chicken in 3 tablespoons butter 5 minutes until golden brown.

5Remove from skillet.

6Add remaining butter; cook mushrooms and garlic until tender.

7Return chicken to pan.

8Add wine and lemon juice.
-
9Simmer 7 to 10 minutes.

10Top with parsley.
