- 2 lb. boned chicken breast, pounded thin
- salt and pepper
- 1/4 c. olive oil
- 2 Tbsp. butter
- 1 c. water
- 1 bouillon cube
- 1/2 c. dry wine
- 1 lemon
Directions

1Salt and pepper both sides and coat with flour.

2In 12-inch skillet on medium-high heat, add 1/4 cup olive oil and 2 tablespoons butter.

3Lightly brown both sides of chicken.

4Remove chicken from skillet.

5Add 1 cup of water, bouillon cube, 1/2 teaspoon salt and 1/2 cup of dry wine.

6Return chicken to skillet and simmer for 30 minutes.

7Add juice from lemon and slice lemon over chicken; cook for 1 more minute and serve.
