- 4 skinless, boneless chicken breasts
- 1/4 c. flour
- 1/4 c. butter
- juice of 1 lemon
- 1/2 c. chicken broth
- 1/4 c. minced fresh parsley
Directions

1Slice each breast in half lengthwise, butterfly style into 8 thin, flat pieces.

2Dip pieces in flour to coat lightly.

3In skillet, melt butter.

4Saute chicken until browned on both sides. Add lemon juice and broth to pan and cook 3 to 4 minutes, turning chicken frequently in sauce until cooked through.

5Garnish with parsley.

6Great served with pasta.
