Ingredients

  • 3 to 4 c. cubed, cooked chicken
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1 1/2 c. self-rising flour
  • 1 (10 3/4 oz.) can chicken broth or use 1 can homemade stock (chicken)
  • 1 1/2 c. buttermilk
  • 1/2 c. (1 stick) butter or oleo, melted
  • 3 boiled eggs, chopped

Directions

    Place chicken in lightly greased 9 x 13 x 2-inch baking dish. Blend soup with broth and eggs.

    Pour over chicken.

    Combine flour, buttermilk and oleo or butter.

    Mix well.

    Spoon over chicken, spreading evenly; do not stir.

    Bake, uncovered, at 350° for 1 hour or until crust rises to top and is golden brown.
