- 2 lb. chicken breasts and thighs
- 4 large baking potatoes, quartered
- 1 large onion, sliced
- 1 can peas, drained
- 4 Tbsp. Parmesan cheese
- 1 can mushrooms, drained
- 1 large can plum tomatoes
- 4 Tbsp. olive oil
- 1 tsp. oregano
- salt and pepper
Directions

1Arrange chicken, potatoes, peas, onion and mushrooms in a roasting pan.

2Pour tomatoes over top.

3Add salt, pepper, olive oil and cheese.

4Bake in a preheated oven at 375° for 1 hour and 15 minutes.
