  • 2 lb. chicken breasts and thighs
  • 4 large baking potatoes, quartered
  • 1 large onion, sliced
  • 1 can peas, drained
  • 4 Tbsp. Parmesan cheese
  • 1 can mushrooms, drained
  • 1 large can plum tomatoes
  • 4 Tbsp. olive oil
  • 1 tsp. oregano
  • salt and pepper

Directions

    Arrange chicken, potatoes, peas, onion and mushrooms in a roasting pan.

    Pour tomatoes over top.

    Add salt, pepper, olive oil and cheese.

    Bake in a preheated oven at 375° for 1 hour and 15 minutes.
