  • 1 stewing chicken (in pieces)
  • 2 large onions, coarsely chopped
  • chopped parsley (fine)
  • 1 c. coarsely chopped celery
  • 1/2 tsp. poultry seasoning
  • salt and pepper to taste
  • water

Directions

    In large stewing pot, cover the chicken (1-inch over the chicken pieces) with water.

    Add the celery, half of the onion, poultry seasoning and salt and pepper.

    Slow boil until the chicken meat falls from the bones.

    Remove from the heat.

    Strain the broth into a cooking pot.

    Add the remaining onions, parsley and 4 cups of water.

    Simmer the liquid on the stove.

    As the broth simmers, go through the strained chicken pieces and hand pick off all of the chicken meat, being careful not to get any bones.

    Shred the meat into small pieces and return the meat to the simmering broth.

    Simmer, covered, for 30 minutes.
