- 1 c. onion, chopped
- 1 c. celery, chopped
- 1 c. carrots, chopped
- 1/2 c. flour
- 1/3 c. margarine
- 2 c. chicken broth
- 1 c. half and half
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 c. cooked chicken
- 1 c. small peas
- pastry (see Chicken Pot Pie pastry)
Directions

1Saute onion, celery and carrots in butter for 10 minutes.

2Add flour to mixture.

3Cook 1 minute, stirring constantly.

4Add broth and half and half until thickened.

5Stir in salt, pepper, peas, and chopped chicken.

6Pour chicken mixture into shallow 2-quart casserole dish.

7Top with pastry.

8Cut slits to allow steam to escape.

9Bake at 400° for 30 minutes or until crust is golden brown.
