  • 1/2 tsp. salt, divided
  • 3 chicken breast halves
  • 3 chicken thighs
  • 3 chicken drumsticks
  • 1 Tbsp. vegetable oil
  • 1 1/2 c. green pepper, chopped fine
  • 1/2 c. chopped onion
  • 2 tsp. basil
  • 1 clove garlic, minced
  • 1 (1 lb.) eggplant, peeled and cut crosswise into 1/4-inch slices
  • 2 medium tomatoes, peeled and cut crosswise into 1/4-inch slices
  • 1/4 c. chopped fresh parsley

    Skin chicken.

    Sprinkle salt over chicken (set aside).

    Heat oil in a large, nonstick skillet over medium heat.

    Add chicken; cook 5 minutes on each side or until browned.
