- 3 chicken drumsticks
- 1 Tbsp. vegetable oil
- 1 1/2 c. green pepper, chopped fine
- 1/2 c. chopped onion
- 2 tsp. basil
- 1 clove garlic, minced
- 1 (1 lb.) eggplant, peeled and cut crosswise into 1/4-inch slices
- 2 medium tomatoes, peeled and cut crosswise into 1/4-inch slices
- 1/4 c. chopped fresh parsley
