- 2 Tbsp. butter
- 1/4 c. all-purpose flour
- 1 egg
- 1/4 c. shredded Swiss cheese
- 2 c. finely chopped chicken
- 1/4 c. finely chopped celery
- 2 Tbsp. pimento
- 1/4 c. mayonnaise
- 1/2 tsp. salt
- dash of pepper
Directions

1Melt butter in boiling water (1/4 cup); add flour and dash of salt.

2Stir vigorously.

3Cook and stir until mixture forms a ball that does not separate.

4Remove from heat and cool slightly.

5Add egg and beat with mixture until smooth.

6Stir in cheese.

7Drop dough onto baking sheet using 1 level teaspoonful of dough for each puff.

8Bake at 350° for 15 to 20 minutes.

9Remove puffs from oven; cool and split.
