Chicken Ravioli

Ingredients

  • 1 hen or 4 chicken breasts
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 6 stalks celery, chopped
  • 1 (12 oz.) pkg. wide noodles
  • 1 (3 oz.) canned, sliced mushrooms
  • 1 lb. grated Cheddar cheese
  • 1 stick margarine
  • 1 small jar pimento
  • 1 can cream of mushroom soup
  • salt and pepper to taste

    Preheat oven to 350°.

    Cook chicken, skin and debone.

    Cut to bite-size pieces.

    Reserve stock after removing fat.

    Saute green peppers, onion and celery in margarine.

    Cook noodles in chicken stock.

    Mix together cheese (reserve a little cheese for topping), pimento, mushrooms, mushroom soup, 1 cup chicken stock, salt and pepper to taste.

    Add to noodles.

    Put in large pan and top with reserved cheese.

    Bake for 30 minutes or until hot and bubbly.
