Ingredients
- 1 hen or 4 chicken breasts
- 1 large onion, chopped
- 1 green pepper, chopped
- 6 stalks celery, chopped
- 1 (12 oz.) pkg. wide noodles
- 1 (3 oz.) canned, sliced mushrooms
- 1 lb. grated Cheddar cheese
- 1 stick margarine
- 1 small jar pimento
- 1 can cream of mushroom soup
- salt and pepper to taste
Directions

1Preheat oven to 350°.

2Cook chicken, skin and debone.

3Cut to bite-size pieces.

4Reserve stock after removing fat.

5Saute green peppers, onion and celery in margarine.

6Cook noodles in chicken stock.

7Mix together cheese (reserve a little cheese for topping), pimento, mushrooms, mushroom soup, 1 cup chicken stock, salt and pepper to taste.

8Add to noodles.

9Put in large pan and top with reserved cheese.

10Bake for 30 minutes or until hot and bubbly.
