Chicken Ravioli

Ingredients

  • 1 hen or large fryer
  • 1 lb. sharp Cheddar cheese, grated
  • 2 pkg. wide egg noodles
  • 1 green pepper, chopped
  • 1 can pimentos, chopped
  • 1 onion, finely chopped
  • 1 can chopped mushrooms (optional)
  • seasonings as desired (I use thyme, garlic, salt and pepper)

Directions

    Boil chicken in large covered pan.

    Remove chicken from broth; cool.
  3. 3
    Debone and cut up as for salad.

    Saute pepper and onion in skillet with butter; strain broth.

    Bring to boil and add noodles; cook until done.

    Add chopped chicken and all remaining ingredients and seasonings.

    Mix thoroughly.

    Place in casserole dish and heat in oven until cheese is well melted.

    It can be cooked at a very low temperature on stove top.

    Serve warm.
