Chicken Rice Dish

  • 1 cut up fryer
  • 1 stick oleo
  • 1 green pepper
  • 3 c. broth or 2 chicken bouillon cubes plus 3 c. water
  • 1 c. uncooked rice
  • 2 medium size onions
  • 2 medium tomatoes, quartered
  • salt and pepper
  • flour

Directions

    Cut up chicken; salt, pepper and flour it.

    Melt oleo in heavy skillet.
  3. 3
    Place chicken in melted butter; cook at 400° for 20 minutes.

    Turn chicken and add uncooked rice, sliced onions, green pepper and tomatoes; salt and pepper.

    Pour broth over this and return to oven for 40 minutes.

    Cover with lid.
