- 1 cut up fryer
- 1 stick oleo
- 1 green pepper
- 3 c. broth or 2 chicken bouillon cubes plus 3 c. water
- 1 c. uncooked rice
- 2 medium size onions
- 2 medium tomatoes, quartered
- salt and pepper
- flour
Directions

1Cut up chicken; salt, pepper and flour it.

2Melt oleo in heavy skillet.

3Place chicken in melted butter; cook at 400° for 20 minutes.

4Turn chicken and add uncooked rice, sliced onions, green pepper and tomatoes; salt and pepper.

5Pour broth over this and return to oven for 40 minutes.

6Cover with lid.
