  • 2/3 c. long grain rice
  • 1/3 c. olive oil
  • 1 c. broccoli flowerets
  • 1 c. cooked chicken breast (boneless)
  • 1/4 c. diced peppers
  • 2/3 c. thin spaghetti
  • 3 c. chicken broth
  • 1/4 c. thyme
  • 1/2 c. scallions
  • 1/4 c. walnuts, chopped

Directions

    Mix rice and spaghetti together and saute in olive oil.

    Add 3 cups chicken stock.

    Add thyme, chicken, walnuts, scallions and peppers.
