Chicken-Rice Skillet

Ingredients

  • 1 Tbsp. oil
  • 2 Tbsp. soy sauce
  • 1 medium onion, chopped
  • 1 clove garlic (optional)
  • 1 fryer, cut up (about 3 lb.)
  • 3/4 Tbsp. ginger
  • pepper
  • 2 1/4 to 2 1/2 c. hot water
  • 1 chicken bouillon cube
  • 1 c. rice

Directions

    In skillet or electric frypan, stir together oil, soy sauce, onion and garlic.

    Add chicken and brown over medium heat.

    Season with ginger and pepper.

    Push chicken to center with pieces overlapping.

    Pour 2 1/4 cups water around chicken and add bouillon and rice.

    Cover and simmer about 35 minutes.

    Add 1/4 cup water, if needed.
