- 1 lb boneless chicken, cubed
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 large onion, thinly sliced
- 1 large red bell pepper, chopped
- 1 12 cups arborio rice
- 2 -3 cups chicken broth
- 14 teaspoon salt
- 14 teaspoon black pepper
- 1 tablespoon grated parmesan cheese
Directions

1Saute chicken in 1 tablespoon olive oil until cooked through.

2Remove from pan.

3Add garlic, onion and bell pepper and saute 5 minutes.

4Add rice to saucepan and cook, stirring frequently, 3-4 minutes.

5Heat chicken broth to boiling.

6Add 1 cup to rice; cook, stirring constantly, until liquid is absorbed.

7Continue adding broth 1/2 cup at a time.

8Stir in chicken; cook 2-3 minutes.

9Stir in salt and pepper.

10Serve topped with cheese.
