  • 1 lb boneless chicken, cubed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 large onion, thinly sliced
  • 1 large red bell pepper, chopped
  • 1 12 cups arborio rice
  • 2 -3 cups chicken broth
  • 14 teaspoon salt
  • 14 teaspoon black pepper
  • 1 tablespoon grated parmesan cheese

Directions

    Saute chicken in 1 tablespoon olive oil until cooked through.

    Remove from pan.

    Add garlic, onion and bell pepper and saute 5 minutes.

    Add rice to saucepan and cook, stirring frequently, 3-4 minutes.

    Heat chicken broth to boiling.

    Add 1 cup to rice; cook, stirring constantly, until liquid is absorbed.

    Continue adding broth 1/2 cup at a time.

    Stir in chicken; cook 2-3 minutes.

    Stir in salt and pepper.

    Serve topped with cheese.
