Ingredients
- 2 1/2 to 3 lb. chicken, cut up in pieces
- 2 Tbsp. oil
- 3/4 c. rice
- 1/2 c. chopped onion
- 2 tsp. salt
- 1 tsp. poultry seasoning
- 8 oz. fresh mushrooms, sliced
- 4 carrots, peeled and sliced
- 2 c. water
- paprika
Directions

1In 10-inch skillet brown chicken about 15 minutes.

2Drain all but 2 tablespoons oil and remove chicken.

3Add rice, onion and seasonings and cook until rice is browned.

4Add mushrooms, carrots and water.

5Put chicken on top.

6Season chicken with salt, pepper and paprika.

7Cover.

8Simmer 45 minutes to 1 hour.
