Chicken Risotto

  • 2 1/2 to 3 lb. chicken, cut up in pieces
  • 2 Tbsp. oil
  • 3/4 c. rice
  • 1/2 c. chopped onion
  • 2 tsp. salt
  • 1 tsp. poultry seasoning
  • 8 oz. fresh mushrooms, sliced
  • 4 carrots, peeled and sliced
  • 2 c. water
  • paprika

Directions

    In 10-inch skillet brown chicken about 15 minutes.

    Drain all but 2 tablespoons oil and remove chicken.

    Add rice, onion and seasonings and cook until rice is browned.

    Add mushrooms, carrots and water.

    Put chicken on top.

    Season chicken with salt, pepper and paprika.

    Cover.

    Simmer 45 minutes to 1 hour.
