- boneless breasts of chicken
- Mozzarella, sliced thin
- fresh basil
- thin sliced pepperoni or salami
- butter
- sherry
- sliced mushrooms
- small onion, chopped fine
- salt and pepper
Directions

1Flatten chicken breasts like cutlets, salt and pepper them. Layer each cutlet with Mozzarella cheese and pepperoni or salami. Add 3 leaves basil, roll cutlets and secure with toothpicks.

2Dust with flour and refrigerate about 2 hours.

3Pan fry roll-ups in butter or other shortening for 10 minutes.

4Add mushrooms, onion and sherry.

5Cover and cook for 5 more minutes.
