- 1 (3 lb.) chicken
- 1 small onion
- 1 can sliced mushrooms, drained
- 1 can chopped Ro-Tel tomatoes
- 7 oz. pkg. vermicelli
- 1 lb. cubed Velveeta cheese
- 1 can English peas, drained
- chicken broth
- salt and pepper to taste
Directions

1Boil chicken with onion and seasonings.

2Cool, debone and chop. Cook pasta in broth from chicken; drain.

3Add Velveeta, English peas, drained mushrooms and undrained Ro-Tel tomatoes.

4Add chicken.

5Bake in 9 x 13-inch casserole at 350° for 30 minutes.
