Chicken Rotel

Ingredients

  • 1 large fryer, cooked, deboned and cut up
  • 2 large bell peppers
  • 2 large onions
  • 1 1/2 sticks oleo
  • 1 (12 oz.) vermicelli
  • 1 or 2 cans Ro-Tel tomatoes
  • 1 small can green peas
  • 2 lb. Velveeta cheese
  • 1 large can mushrooms
  • 2 Tbsp. Worcestershire sauce

    Cook chicken and save broth.

    Saute peppers and onions in a little butter.

    Cook vermicelli in chicken broth.

    Add Ro-Tel tomatoes and Worcestershire sauce.

    Add peas, mushrooms, peppers and onions, then add cheese (just break or cut in small pieces). Stir until cheese begins to melt.

    Add chicken.

    Pour in pan. Bake 35 to 40 minutes at 350°.

    This serves about 15 people (may be frozen before cooking).
