  • 3 1/2 lb. chicken breasts
  • 1 green pepper, chopped
  • 2 onions, chopped
  • 1 1/2 sticks oleo
  • 1 (7 oz.) pkg. vermicelli
  • 1 can Ro-Tel tomatoes
  • 1 lb. Velveeta cheese
  • 1 can mushrooms
  • 1 can water chestnuts
  • 1/4 tsp. dry mustard
  • 1 Tbsp. Worcestershire sauce

    Cook chicken in salted water. Debone and cut in large pieces. Strain and save broth. Saute onion and pepper in oleo. Add mushrooms, Ro-Tel, cheese, Worcestershire sauce, dry mustard, salt, pepper and water chestnuts. Cook vermicelli 5 minutes in chicken broth. Strain and carefully combine all ingredients. Fills 2 large casserole to serve 12 to 14. Freezes well. Cook when thawed at 350° for 30 to 45 minutes.
