Chicken Satinbocca

  • 6 boned chicken breast halves (3 whole)
  • 6 thin slices boiled ham
  • 3 slices Muenster cheese, halved
  • 1 medium tomato, seeded and chopped
  • 1/2 tsp. sage
  • 1/3 c. seasoned bread crumbs
  • 2 Tbsp. Parmesan cheese
  • 2 Tbsp. fresh parsley, chopped
  • 4 Tbsp. butter or margarine, melted

Directions

    Place chicken, bone side up, on cutting board and cover with plastic wrap.

    Working from center out, pound with mallet into a 5 x 5-inch piece.

    Remove wrap and place a ham slice on each breast, cutting it to fit.

    Top with some tomato and a dash of sage.

    Tuck in sides and roll up, jelly roll style, pressing to seal well.
