  • 1/4 cups Margarine
  • 1/4 cups Olive Oil
  • 1 whole Medium Onion, Diced
  • 1 Tablespoon Minced Garlic
  • 3 pounds Boneless, Skinless Chicken Breasts, Diced (3 Pounds Is Roughly 5 Large Chicken Breasts)
  • 1/2 cups Freshly Squeezed Lemon Juice (for 1/2 Cup You'll Need 2 Lemons)
  • 1 teaspoon Salt, Or To Taste
  • 1/2 teaspoons Ground Pepper
  • 1/2 cups Fresh Parsley Flakes OR 2 Tablespoons Dried Parsley
  • 1 pound Cooked (Peeled And Deveined) Shrimp (optional)
  • 2 whole Tomato, Diced
  • 1/2 cups Green Onions, diced
  • Cooked Rice Or Pasta, To Serve

    In a large pan over medium heat, saute the onion and garlic in the margarine and olive oil for 2 minutes.

    Add the chicken, lemon juice, salt, pepper, and parsley.

    Add the shrimp, if using.

    Simmer for 10 minutes, stirring occasionally, until the chicken is fully cooked.

    Remove from heat; add tomato and green onions.
