- 1/4 cups Olive Oil
- 1 whole Medium Onion, Diced
- 1 Tablespoon Minced Garlic
- 3 pounds Boneless, Skinless Chicken Breasts, Diced (3 Pounds Is Roughly 5 Large Chicken Breasts)
- 1/2 cups Freshly Squeezed Lemon Juice (for 1/2 Cup You'll Need 2 Lemons)
- 1 teaspoon Salt, Or To Taste
- 1/2 teaspoons Ground Pepper
- 1/2 cups Fresh Parsley Flakes OR 2 Tablespoons Dried Parsley
- 1 pound Cooked (Peeled And Deveined) Shrimp (optional)
- 2 whole Tomato, Diced
- 1/2 cups Green Onions, diced
- Cooked Rice Or Pasta, To Serve
Directions

1In a large pan over medium heat, saute the onion and garlic in the margarine and olive oil for 2 minutes.

2Add the chicken, lemon juice, salt, pepper, and parsley.

3Add the shrimp, if using.

4Simmer for 10 minutes, stirring occasionally, until the chicken is fully cooked.

5Remove from heat; add tomato and green onions.
