- 4 breast halves (skinless)
- 2 Tbsp. olive oil
- 1 c. chopped onions
- 1 clove garlic, chopped
- 1/2 c. white wine or chicken broth
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. chopped fresh tomatoes
- 1 c. sliced fresh mushrooms
- 2 Tbsp. parsley
Directions

1Heat oil in Dutch oven.

2Add chicken.

3Brown lightly on each side (about 10 minutes).

4Remove chicken and sprinkle with salt and pepper.

5Add onion and garlic. Stir-fry until golden brown (about 5 minutes).

6Add tomatoes, mushroom and parsley.

7Return chicken to pan.

8Spoon vegetables over meat.

9Reduce heat to low and cook 10 minutes more, until sauce is thick and fork can be inserted with ease.

10Serve over angel hair pasta.
