  • 3.5 lbs. chicken cut into serving pieces
  • Salt & freshly ground pepper
  • Flour for dredging
  • 3 tbs. corn oil
  • 2 tbs. butter
  • 1 tbs minced garlic
  • Juice of half a lemon
  • 3/4 cup dry white wine
  • 1/4 cup finely chopped parsely

    1. Dredge the chicken in flour sprinkle with salt and pepper to taste

    2. Heath the oil in a skillet and add the chicken pieces skin side down. Cook over moderately high heat about 8-10 minutes.

    3. Turn the pieces and cook about 10 to 12 minutes longer.

    4. Pour off the fat. Add the butter and garlic and stir to coat the chicken pieces.

    4. Add the wine and bring to boil. Sprinkle with lemon juice and parsley. Cook about 3 minutes longer
