Ingredients

  • 2 large whole chicken breasts
  • 1 large whole onion
  • 1 c. chopped celery
  • 1/2 c. butter
  • 3/4 c. flour
  • 1 c. heavy cream
  • 1 c. half and half
  • salt and pepper
  • 1 c. cooked rice

Directions

    Boil chicken; remove.

    Simmer 1 quart chicken broth with onion and celery until tender.

    Mash onion with a potato masher and remove any large pieces.

    Mash celery.

    In a separate pan, melt butter and blend in flour.

    Add to chicken broth.

    Pour the 2 kinds of cream into broth.

    Add cooked rice and chicken which has been chopped into tiny pieces.

    Season to taste.
