  • 1 to 2 lb. chicken
  • 1 sliced onion
  • 8 c. water
  • 1/2 lb. pared, quartered potatoes
  • 2 oz. vermicelli, cut into 1-inch pieces
  • 2 oz. chopped smoked ham
  • 2 cloves garlic
  • 1 Tbsp. salt

Directions

    Divide the chicken into pieces at joints.

    Add to the water with ham, garlic, onion and salt.

    Let stand for half an hour. Place over the heat until the chicken is tender.

    Strain.

    Add potatoes, vermicelli and chicken pieces.

    Cook until the potatoes are done.
