- 2 1/2 lb. chicken pieces (skin removed)
- 1 onion, chopped
- 4 carrots, sliced
- 3 Tbsp. soy sauce
- 1 tsp. salt
- water (to cover, about 3 1/2 c.)
- 3 potatoes, peeled and diced
- 2 stalks celery, sliced
- 1 tsp. Tabasco
Directions

1Combine all ingredients in large kettle.

2Bring to boil. Cover and simmer over low heat for 2 to 3 hours.

3Stir occasionally.

4Add water, if needed.

5Cool.
-
6Remove bones.
-
7Chill, then discard fat.

8Reheat and serve.
