Ingredients

  • 2 1/2 lb. chicken pieces (skin removed)
  • 1 onion, chopped
  • 4 carrots, sliced
  • 3 Tbsp. soy sauce
  • 1 tsp. salt
  • water (to cover, about 3 1/2 c.)
  • 3 potatoes, peeled and diced
  • 2 stalks celery, sliced
  • 1 tsp. Tabasco

Directions

    Combine all ingredients in large kettle.

    Bring to boil. Cover and simmer over low heat for 2 to 3 hours.

    Stir occasionally.

    Add water, if needed.

    Cool.

    Remove bones.

    Chill, then discard fat.

    Reheat and serve.
