- 5 lb. stew hen
- 1 qt. water
- 1 stalk celery (with leaves)
- 1 medium onion
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1 c. fine noodles, uncooked
- 2 Tbsp. parsley, minced
Directions

1Place chicken, water, celery, onion and seasoning in Dutch oven.

2Cover and simmer for 2 hours.

3Remove chicken and strain liquid.

4Remove skin and bones from chicken.

5Cut meat in small pieces.

6Return stock to Dutch oven.

7Add noodles.

8Cover and cook until tender, about 20 minutes.

9Add chicken, meat and parsley.
