- 1 large chicken
- 2 back pieces
- 4 stalks celery and leaves
- 2 carrots, peeled
- 2 qt. water
- 1 onion, peeled and chopped
Directions

1Clean chicken parts thoroughly.

2Place in kettle with water and simmer one hour or more, adding more water if necessary.

3Add vegetables and simmer for another hour.

4Remove chicken parts and set aside.

5Allow broth to cool.

6Then remove fat.

7Strain through cheese cloth placed in a strainer.

8Discard vegetables.

9Remove skin and bones from cooked chicken.

10Separate meat into chunks.
