  • 1 whole chicken or equal amount of your favorite pieces
  • 1 (16 oz.) pkg. spaghetti
  • 1 large diced onion
  • 1 diced green pepper
  • 8 oz. fresh mushrooms, sliced
  • 1 (16 oz.) can tomatoes, diced
  • 1 can Ro-Tel diced tomatoes and green chiles
  • 1 1/2 lb. Velveeta cheese
  • salt
  • pepper

Directions

    Salt and pepper chicken.

    Cover with water and simmer for about 1 hour.

    Remove chicken from broth and allow to cool.

    Save water and add additional water to broth and cook spaghetti.
