Ingredients

  • chicken, deboned, boiled and cut into bite-size pieces
  • 4 c. canned crushed tomatoes
  • 1 Tbsp. chopped parsley
  • 1 large onion, quartered
  • 1 clove garlic, crushed
  • 1 Tbsp. Worcestershire
  • 2 tsp. salt
  • pinch of basil
  • pinch of thyme
  • 1 lb. canned or fresh mushrooms
  • butter
  • 2 Tbsp. flour
  • 1 c. light cream
  • 1/2 lb. Cheddar cheese, grated
  • 1/2 lb. spaghetti

Directions

    Simmer tomatoes and 2 cups chicken stock until liquid is reduced by half.

    Season with chopped parsley, onion, garlic, Worcestershire, salt, basil and thyme.

    Slice and saute fresh or canned mushrooms in butter until golden and drain.
