- 2 1/2 lb. chicken, cut in serving pieces
- 2 Tbsp. butter
- 1/4 to 1/2 c. shortening
- 1 c. sliced, stuffed olives
- 1 Tbsp. minced parsley
- 1/2 tsp. celery salt
- 2 small onions, chopped
- 1 c. chopped green pepper
- 1 tsp. black pepper
- 1 lb. can tomatoes
- 1 1/2 tsp. salt
Directions

1Salt and pepper chicken lightly; flour.

2Melt butter in large skillet; add onions and cook until transparent.

3Add shortening and fry chicken until brown.

4Add green peppers, olives, parsley, tomatoes and seasonings.

5Cover and cook over low heat for 45 minutes.
