- 1 medium onion, diced
- 2 tablespoons vegetable oil
- One 10 3/4-ounce can cream of mushroom soup
- 1/2 cup frozen peas
- 1/2 cup frozen sliced carrots
- 1 cup diced cooked potatoes
- 2 cups cooked pork roast (page 5) cut into medium dice
- 1 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Directions

1Saute the onion in the vegetable oil in a skillet.

2Add the cream of mushroom soup, peas, carrots, and potatoes.

3Add the pork and thin the mixture with the water.

4Add the salt and pepper.

5Cover the skillet and simmer for 15 minutes.

6Serve 2 heaping tablespoons on a dinner plate.

7Refrigerate the remainder.
