  • 1 medium onion, diced
  • 2 tablespoons vegetable oil
  • One 10 3/4-ounce can cream of mushroom soup
  • 1/2 cup frozen peas
  • 1/2 cup frozen sliced carrots
  • 1 cup diced cooked potatoes
  • 2 cups cooked pork roast (page 5) cut into medium dice
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

    Saute the onion in the vegetable oil in a skillet.

    Add the cream of mushroom soup, peas, carrots, and potatoes.

    Add the pork and thin the mixture with the water.

    Add the salt and pepper.

    Cover the skillet and simmer for 15 minutes.
